I can't skip breakfast, can I ? So also a breakfast recipe using Cucumbers. When I was looking for a breakfast recipe, I came across multiple recipes of Cucumber Dosa over the internet. I knew in the back of my mind that cucumber dosa would taste good as I remember having read about it in a magazine long time back. I have since come up with my version of Dosa which was well worth it! Here is the recipe for Cucumber Dosa as part of BM#6 Day 5. Check the details of my fellow marathoners too....
Ingredients -
Rice 1 cup (I used Brown rice)
Urad Dal 1/4 cup
Kheera / Cucumber 1 (7 inch long), finely chopped
Fenugreek seeds 1/2 tsp
Salt as needed
Pepper Powder 1/2 tsp (Optional)
Oil to cook Dosas
Note - The Dosas came out real soft, so if a crispier version is desired, i suggest omitting Urad dal or reducing it further.
Method Of Preparation -
Soak rice, urad dal, fenugreek seeds for 5-6 hrs. and grind into a fine batter adding the chopped kheera.
Add pepper powder and mix well. Set aside the batter for a few minutes.
Heat a griddle/tawa and pour ladle ful batter and spread it in a circular fashion. Sprinkle oil as needed and cook on both sides. Remove it onto a plate.
Continue for the rest of the batter.
Serve it with any chutney of your choice.
Preparation Time 30 min (Soaking and grinding time not included)
Makes 12 Dosas (medium size)
