Being an Andhraite (person coming from Andhra Pradesh, India), how can I not prepare pachadi out of these humble cucumbers? As I had written about Dosakaya Pachadi a few months back and I had mentioned that I would try the same pachadi with Kheera. Here I am with the same type of preparation with Kheera. I should say I personally loved this version better as I prefer these Cucumbers to Dosakaya. I prepared this pachadi in less than 10 min and we all finished it in less than 5 min :) You would agree with me that this is spicier version of a cucumber salad! So here is the recipe for the Day 4 of BM #6.
Ingredients -
Kheera / Cucumber peeled, finely chopped 1 1/2 cups (divided use)
Tomato pureed 1/2 cup
Tamarind juice / Lemon juice 1 Tbsp or as needed
Turmeric 1/4 tsp
Salt as needed
Green Chillies 3-4 or as needed
Coriander leaves handful (I didn't add)
Seasoning (Oil 2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Methi Seeds 7-8, Jeera 1/2 tsp, Mustard seeds 1 tsp, Hing couple pinches, Red chilli 1, Curry leaves 6-7)
Method Of Preparation -
In a mixing bowl, add the chopped cucumber and salt and turmeric. Set it aside.
In a small sauce pan, add oil and the rest of the seasoning ingredients and after the mustard seeds crackle and the dals are brown, add the chopped green chillies, chopped tomatoes, handful chopped cucumber, coriander leaves, tamarind juice (if using) and switch off the flame. (The tomatoes need not get cooked).
After the seasoning cools down, grind it to a fine paste and pour in the mixing bowl with the chopped cucumbers. Mix well and serve over hot steaming rice and ghee!

Feel like finishing that wonderful looking mouthwatering pachadi, very tempting and prefect side dish to enjoy with rotis..

We just love this. I don't add the tomato so mine ends up in green. A hit even with my daughter.
