For Day 3 of BM #19, I chose to make these nutritious, Calcium rich laddus from Veggiplatter.
Ingredients -
Ragi Flour (I used malted Ragi Flour) 1/2 cup
Sesame Seeds 1/4 cup
Nuts (Almonds, Peanuts and Cashews) 3/4 cup
Coconut Powder 3 Tbsp
Grated Jaggery 1/2 cup
Cardamom Powder 1/4 tsp
Method Of Preparation -
Dry roast the sesame seeds until they turn light golden brown. Also roast the nuts and set them aside.
Roast the ragi flour as well. But if using the malted ragi flour, just warming the flour would be enough. Also warm the coconut powder.
Blend all the roasted ingredients, grated jaggery, coconut powder and cardamom powder in a mixer/food processor.
Shape the mixture into laddus. If adding ghee is preferable, feel free to do so but I didn't add anything to bind the laddus. I felt that the oils in the nuts and sesame would be enough.
Serve with milk. Store in an air tight container.
