Here is a Calcium rich saute which is very popular at home. This time around I followed the recipe from Veggieplatter and simplified the process as mentioned by her.
This qualifies under calcium rich recipes for BM #19.
Ingredients -
Spinach chopped 3 cups
Toor Dal / Kandipappu handful
Salt as needed
Turmeric 1/8 tsp
Red Chilli Powder as needed
Coconut (fresh/frozen) ( I used coconut powder)
Seasoning (Oil 1 Tbsp, Chana dal 1 tsp, Urad Dal 1 tsp, Jeera 1/2 tsp, Mustard seeds 1/2 tsp, Red Chillies 1-2)
Method Of Preparation -
Cook toor dal either on the stove top or in the microwave just so the dal is just about cooked and not mushy. Set aside.
In a heated kadai/wok, add oil and the rest of the seasoning in the same order mentioned.
After the dals are brown and the mustard seeds pop, add the toor dal and saute for a few seconds.
Add the chopped spinach and let it cook for a couple of minutes.
Sprinkle coconut, salt, turmeric and red chilli powder. Mix well and remove from fire.
Serve it hot with rice or roti. I loved it with a few drops of lemon juice too!
