BM #117 Week 3 Day 1 - 

Today for the Andhra Dish starting with the letter "V", I have the classic "Vankaya Ninchudukaya" which is slightly different from the popular "Gutti Vankaya". Vankaya is eggplant, and Ninchudukaya means stuffed vegetable.

When I was asking my husband for suggestions for dishes starting with the letter V, he asked me why I never tried Stuffed Vankaya. He really wanted me to make Vankaya for V. So I set the process in motion by calling my mom and getting the recipe from her.

My mom was surprised when I asked her for this recipe as she is aware of my eggplant allergy, and also knew that it is an unpopular veggie at my place. But she was happy that I was willing to try it, thanks to blogging. :) She also shared a tip and advised me to apply coconut oil generously to my palms before I start handling the eggplants, to avoid an allergic reaction. 


Happy to report that I didn't have any itching after I applied coconut oil to my palms and handled the eggplants.

The biggest win for me in all this was that when the eggplants were cooking in the pan, my little one peeped into the kitchen during the middle of a break from her virtual school and goes "Ooh, Amma that looks so good, can I have it for my lunch?". 

That was a first for her. She asked me what the podi contains and she decided she would like to try it. This is the first time she even attempted to taste eggplant and she was super impressed. She is now an eggplant lover as far as this dish is concerned.



Recipe Source: Amma
Ingredients - 

Vankaya or Eggplants 8 nos
Oil 3 Tbsp
Turmeric as needed
Red Chili Powder as needed
Salt as needed
Roast and Grind - Koora Podi 
Chana Dal 3 Tbsp
Urad Dal 3 Tbsp
Coriander Seeds 6 Tbsp
Coconut Powder 1/4 cup
Peanuts 1/4 cup
Sesame Seeds 2 Tbsp
Dry Red Chilies 3-4 (or as needed)

*Notes from Amma - 
1.Apply oil (preferably coconut oil) generously to the palms and massage well before handling eggplants. Prevents itching.
2.Choose slightly smaller eggplants which are tender and similar in size and shape.
3.Make sure to add adequate salt and turmeric to the Koora Podi as it is known. If done correctly, there is no need to add salt elsewhere.
4. Adjust the salt and spice in the Koora Podi before starting the Ninchudukaya preparation.
5.It can be prepared in a pressure cooker as well. (I just adopted the stove top method).



Method Of Preparation -

To make the Koora Podi - 
Dry roast all the ingredients listed under 'Roast and Grind' separately. Allow them to cool and grind into a coarse powder.

Sprinkle salt and red chili powder as needed to make a spicy powder. Set aside.



To make the Vankaya Ninchudukaya -
Choose similar sized eggplants which are medium sized. Wash well and pat them dry.

Keeping the stem intact, make an X shaped slit from the bottom of the eggplant making sure the stem holds the shape of the eggplant. Repeat for each eggplant.

Keeping the eggplant intact, gently stuff the Koora Podi between the slits as much as the eggplant can accommodate. I used about 1 and a half tablespoons of podi for each eggplant.

Make sure the podi doesn't fall out.

Heat a heavy bottomed pan, add about 2-3 tablespoons of oil and gently arrange the stuffed eggplants in the hot oil.

Cook the eggplants well under cover turning them gently until the eggplants are cooked through. I sprinkled about 2 tablespoons of water twice when I felt the undersides of the eggplants were burning.

After the eggplants have been cooked through, sprinkle the remaining podi (I had about 3 tablespoons of podi left) on the eggplants and toss them gently.

Remove from heat and serve them warm with steaming rice.

BM #100 Week 4 Day 3 - 

Here is a retake of Eggplant Parmesan with updated pictures.


Eggplant Parmesan with spaghetti is one of our all time favorites and I first ate it at 'Olive Garden'. In later years I had to give it up owing to allergies. But my older one orders this when we go there!! 

I know the eggplants are deep fried in Olive Garden so I was looking for a baked option and upon googling, I found an eggless version of it and so here is my take on it.

Ingredients - 

Eggplant (Big) 1
Pizza/Pasta Sauce 8 oz 
Bread crumbs 1 cup
All Purpose Flour/Maida 1 cup
Milk 1 cup
Cheese 1/2 cup



Method Of Preparation - 


Make a paste of Maida and Milk to get a bajji batter consistency.


Cut the Eggplant into thick discs, dip them in the Maida-Milk batter and roll on bread crumbs or sprinkle bread crumbs on the discs.


Arrange the eggplant discs on a greased baking tray and bake in a preheated oven at 400F for 25 min on one side.


Flip them onto the other side and bake for another 10-15 min until they brown a little.

Cook spaghetti al dente as per the instructions on the package. Drain and set aside.

To make Eggplant Parmesan, In an oven safe dish, pour pizza/pasta sauce evenly and place the baked eggplant discs in a single layer.


Add more sauce on the eggplant discs and sprinkle cheese as much as required.


Bake at 400F for an additional 10-15 min until the cheese melts and browns a little.

Heat pasta sauce and serve the spaghetti with the pasta sauce and the baked eggplant. Top it with cheese.

BM #93 Week 2 Day 2 -

Parties are occasions for indulgence, Right? My kids say what is a party without some deep fried goodies? So help Srivalli for her anniversary kid's party, I have fried these Bajjis which were loved by my kids.

Though I am allergic to eggplant, I rarely cook with gloves on for my folks. The kids don't mind the bajjis at all and so I am tempted to use up some eggplants for them.

Ingredients - 

Eggplant / Vankaya , thinly sliced 1 cup
Besan 1 cup (or as needed)
Mirchi powder 1/2 tsp (or as per taste)
Ajwain/Vaamu  1/2 tsp 
Salt as per taste
Oil for deep frying



Method Of Preparation -

Make the Bajji batter (the batter should be slightly thick like Idli batter) with besan, water, vaamu, salt and mirchi powder. 

Heat oil in a wok/kadai and dip the eggplant slices in the batter making sure the batter coats the eggplant slice evenly. Gently slide in the oil and fry until golden brown.

Remove the golden brown bajjis onto kitchen paper towels to drain the excess oil.

Repeat until all the slices are done.


I like to sprinkle Black salt (kala namak) after they are done.

BM #91 Week 1 Day 2 - 

In this series of homey and comforting meals presented in the form a thali, here is yet another meal with all my personal favorites (barring the Vankaya/Eggplant which I am allergic to).

Featured in the platter/thali are Dosakaya Pappu, Mamidikaya Menthi Baddhalu, Vankaya Kothimeera Kaaram, Apple Pachadi, Badam Kheer, Rice and Yogurt.

This eggplant curry is the first one I learnt from my mother-in-law after convincing her that I was indeed allergic to eggplant. I wonder why this has never been posted in my blog in the past 8 odd years. My husband and kids love this version of the curry and I occasionally make it wearing gloves and the accompanying drama :).

Recipe Source - My MIL


Ingredients - 

Eggplants, sliced about 8-10
Turmeric 1/2 tsp
Seasoning (Oil 1 Tbsp, Mustard seeds 1 tsp, Chana Dal 2 tsp, Urad Dal 1 tsp, Asafotida a pinch, Curry leaves few)
To Grind - 
Cilantro/Coriander leaves 1 cup
Ginger 1 inch
Green Chiles 2-3
Cumin seeds 1/2 tsp
Tamarind Extract 1 Tbsp (adjust as per taste)
Salt and Jaggery as needed



Method Of Preparation -


In a heavy bottomed vessel, heat some oil and add the seasoning.

Add the sliced eggplant and sprinkle a few drops of water and cook them (for about 6-7 minutes depending on the type of eggplant used) under a closed lid.

Meanwhile make a paste of of all the ingredients listed under 'To Grind' and add it to the cooked eggplant mixture.

Cover and allow the eggplant absorb the cilantro flavor for about 3-4 minutes.


The curry is ready to serve either with roti or rice.

Simple Lunch Thali

BM #71 Week 3 Day 2 -

Check out this everyday meal combination which has a comforting dal and sabji, roti, rice and raitha. This sabji is not something I would have tried out before. 

On a casual call to my sister, Jaya, she mentioned that this was a very good combination for a sabji and that an efficient way to clean out the refrigerator of all the miscellaneous vegetables. This was an instant hit with my husband and my older one. Owing to eggplant allergy I had to refrain for tasting it.

Recipe Source Jaya
Ingredients - 

Eggplant / Vankaya 2 medium size
Cauliflower florets 1 cup 
Potatoes peeled and cubed 1/2 cup
Green Beans or Chikkudukaya stringed and chopped 1/2 cup
Onion, chopped 1/2 cup
Salt, Turmeric and Red chili powder as needed
Seasoning (Oil 1 Tbsp, Mustard seeds 1/2 tsp, Urad Dal 1/2 tsp, Chana Dal 1 tsp, Cumin seeds 1/2 tsp, Curry leaves few)
To Grind - 
Coriander leaves handful
Fresh Coconut 2 Tbsp
Green Chilies as needed
Tamarind extract to taste (I added homemade tamarind extract from a lime sized portion of tamarind )


Vankaya-Cauliflower Muddha Koora

Method Of Preparation -


In a heated pan, add oil and the rest of the seasoning ingredients. After the mustard seeds pop and the dals are brown, add onions and saute until golden brown.

Then add in the chopped  eggplant, potatoes and green beans.

Sprinkle turmeric and few drops of water, cover and let it cook for about 5-6 minutes.

Meanwhile, make a paste of the ingredients listed under 'To grind'. Set aside.

Now add in the cauliflower florets, mix well and check to see if more water is needed.

Add in the masala paste, salt and mix well. Adjust the flavors and sprinkle red chili powder if needed.

Cover and let the flavors blend in. Remove from heat and serve warm with rice/roti.

Waffled Eggplant with Spaghetti

BM #67 Week 2 Day 1 -

This week I shall post some recipes which can be made in a waffle maker. That is my chosen appliance for this week. When I saw the theme which said that we need to make three recipes with a chosen appliance, it immediately got me thinking and I chose the waffle maker.

In fact, my older one did the research for me as I delegated to her the task of picking out the top three of her favorites which I can make in a waffle maker. Her top favorite turned out to be the Eggplant Parmesan. I have made another version of it here. This one is Eggplant Cheddar as I didn't have Parmesan in my pantry :).


Waffled Eggplant with Spaghetti

Ingredients - 

Big Eggplant 2 peeled and sliced (1/4 inch)
Flour 1 Tbsp + Milk 1/4 cup
Bread Slice 2 + Cheese 1/4 cup + Spices (Onion Powder, Garlic powder, Pepper, Red Chili Powder)
Spaghetti cooked as needed
Marinara Sauce and Cheese for serving as needed


Waffled Eggplant

Method Of Preparation -


Prepare the Flour + Milk and set aside.

Pulse the toasted bread slices, shredded cheese and spices and spread it on a serving plate.



Dip each slice in the Flour-milk mixture and roll it in the bread crumbs mixture.

Place it in the heated waffle iron, close and let it cook. Remove as per the instructions of the waffle maker and continue with the rest of the eggplant slices.

To serve these waffled eggplants, arrange cooked spaghetti in a plate, place a couple of these waffled eggplants, pour some marinara sauce and sprinkle cheese and enjoy! The adults enjoyed it with a spicy sauce and no spaghetti :)

Bhagara Baingan

Week 2 Day 2 of BM #61 - 

My husband recently realized that he loves this gravy curry when he tasted it at a party. I had stopped getting eggplants from the market as some of them were irritating my skin even if I chop them. 

But looking at the enthusiasm of my husband, I decided that I would wear gloves and try it out once at home for his satisfaction. But in the end, the gloves didn't work for me and with minimal contact and negligible irritation to my skin, I managed to make this curry to the utter delight of the husband. 

I was unable to take the pictures in day light but I am sure I am going to make this again and again and would definitely update the pictures.

Recipe Source Vahchef
Ingredients - 

Eggplants small sized 6-8
Oil to fry the eggplants 1/4 cup or more
Onion, finely chopped 1/2 cup
Ginger-Garlic-Green Chili Paste as needed
Turmeric 1/4 tsp
Tamarind juice as needed
Coriander Powder 1 tsp
Cumin Powder 1 tsp
Jaggery Powdered 1 tsp
Salt as needed
Seasoning (Oil 2 Tbsp, Mustard seeds 1/2 tsp, Cumin seeds 1/2 tsp)
To be roasted -
Peanuts, roasted 1 cup
Sesame seeds 3 Tbsp
Coconut Powder 3 Tbsp
Cinnamon 1 inch
Cloves 3-4 
Cardamom seeds from 1 pod


Bhagara Baingan

Method Of Preparation -


Wash the eggplants and dry with a clean dish towel. Keeping the stem portion intact, make an 'X' slit on the opposite side but not separating the stem.

In a wok/kadai add oil and slowly slide the eggplants and fry them until they are about 75% done. Remove onto paper towels to drain the excess oil.


Make a fine paste of the ingredients listed under 'To be roasted' adding as much water as needed.

In the same wok/kadai, heat oil and add mustard seeds and cumin seeds. After they pop, add the ginger-garlic-green chili paste and fry for a few seconds. 

Toss the onions into the pan and fry them until they turn golden brown.

Pour the paste into the onion mixture.

Sprinkle coriander powder, cumin powder, turmeric and about 2-3 cups of water to make a runny gravy.

Let it simmer until the oil floats on top.

Slide the fried eggplants into the gravy and add salt, jaggery and tamarind juice. Adjust as per taste.

Cover and let the eggplants absorb all the flavors.

After the eggplants are completely cooked through, remove from heat and serve it either with Rice/Pulao or Roti.

This recipe is from S's Colleague, Rachna and a very good friend of ours. The whole thing started when one fine evening S came home from work and told me about this recipe and said he would get all the ingredients necessary and he himself would prepare. I am not sure if I mentioned before that I am allergic to eggplant. I was all excited about this new recipe and tried making this but my palms started itching so bad that I had to leave it for S to finish cooking it! It was so easy and fast to prepare that he didn't mind cooking it at all. Most importantly, he was mightily pleased at the result. I am sure he will make it quite often at home!! If you are someone who likes Oriental cuisine, then this recipe is for you!


Fiery Eggplant


Ingredients -


Big Eggplant/ Vankaya/Baingan (Chinese variety) 1
*Sweet and Sour Sauce 2-3 Tbsp (I used Kikkoman brand)
Soy Sauce 2 tsp
Salt as per taste
Mirchi Powder to taste
Oil 1-2 Tbsp


* The original recipe called for vegetarian Oyster sauce.
Garnish with fresh basil leaves for added flavor.


Method Of Preparation -


Slice the Eggplant into 1 cm discs. (I got about 10 discs)


On a heated Tawa/Griddle spray a little oil and arrange the eggplant discs (single layer) and cook them on both sides spraying oil as and when required. Repeat the same process for the remaining slices also.


In a heated wok/kadai add about a Tablespoon of oil and gently slide these cooked discs and add the sweet and sour sauce and the soy sauce.


Gently mix so all the eggplant slices are coated well with the sauces. Now is the time for salt and mirchi powder to add more flavor to the mix!


The eggplant tends to get a little mushy and thats ok.


Serve hot with rice.
