BM #132 Week 2 Day 1 - 

This week I shall showcase some of the dishes popular during the colorful festive season of Holi.

Thandai in any form is the beverage of choice during the festival of colors, Holi. I have here a variation to the traditional Thandai with the use of Gulkhand (Rose preserves).


Ingredients - 

For Thandai Masala Paste - 
Almonds 1/2 cup
Cashews 1/2 cup
Gulkhand 1/2 cup
Poppy Seeds 1 Tbsp
Fennel Seeds 1 Tbsp
Black Peppercorns 1/2 tsp
Cardamom  6 to 7
Nutmeg Powder  1/4 tsp
Saffron Strands  10 to 15
Dates 8-9
For Thandai - 
Milk 4 cups 
Evaporated Milk 1 can (14 oz)
Water 2 cup
Sugar 1 Tbsp ( or to taste)
For Garnish -
Chopped Almonds
Chopped Cashews
Dried Rose Petals
Saffron strands


Method Of Preparation -

To make the Thandai paste, soak all the ingredients listed under '
For Thandai Masala Paste' in sufficient water for about 4-5 hours.  

Drain and grind all the ingredients into a fine paste using a high power blender adding as much water as needed.

Meanwhile boil 4 cups of milk adding evaporated milk and allow it to cool.

Mix the thandai masala paste in the boiled and cooled milk. Add sugar as needed. Mix well and refrigerate for atleast 4-5 hours.

Check for the flavor and serve cold garnishing with chopped nuts and crushed dry rose petals.

BM #101 Week 1 Day 2 - 

For the second day, here is another family favorite perfect for the ongoing mango season. Mango lassi with a twist. Adding Gulkhand elevates the flavor of this ever popular lassi.

To make this even more sinful, adding mango ice cream is a great idea as well.

Ingredients - 

Mango Pulp 1/2 cup (Fresh or Canned)
Yogurt 1 cup
Milk 1/2 cup
Gulkhand (Rose Preserves) 2 Tbsp
Sweetener if required

Optional Ingredients - Mango Ice cream or Mango Juice 



Method Of Preparation -


Blend all the ingredients with some ice cubes if preferred. Adjust the consistency and the amount of sweetener as preferred.

Garnish with pistachio and gulkhand and serve in individual tall glasses.

BM #84 Week 4 Day 2 - 

We all are traditionally used to eating Paan/beeda with fresh betel leaves after a hearty meal. The ingredients in the paan aid in digestion, acidity and gives an overall sense of well being.

To take this to another level, I made these paan bites after I tasted a store bought version of the same. I played around with the ingredients a little and found that we don't care of coconut powder too much and so I have sparingly used it when I made it the second time.

I felt coarsely ground cloves would add a kick to the sweet paan bites but my other half didn't like the idea.

Ingredients - 

Betel leaves / Paan Ke Patthe 3-5 nos 
Gulkhand / Rose Preserves 3 Tbsp
Coconut Powder 1-2 Tbsp (more if needed)
Dates, finely chopped 2 Tbsp
Sugared Fennel seeds 1 Tbsp
Fennel Seeds 1 Tbsp
Almonds, chopped 2 Tbsp
Cashew, chopped  2 tbsp 
Betel Nuts, coarsely crushed 1 Tbsp (I used the commercially available Crane Sweet Supari)
Tutti Frutti 2 Tbsp (Optional)



Method Of Preparation -


Coarsely crush the paan leaves using a mortar and pestle and set aside. 

Mix all the ingredients in a bowl, adjust the coconut powder as needed to make sure the mixture is not too sticky.

Pinch a Teaspoon of the mixture and roll into tiny balls, roll on the coconut powder and set aside. Continue with the rest of the mixture. I made about 12 tiny bites.

Note - If the Gulkhand is not soft enough, place it in a bowl of hot water or microwave it for a few seconds to make it soft.
