Vegan Gluten Free Ragi Brownies

BM # 68 Day 14 - 

I was looking for a brownie recipe which doesn't use wheat flour. So when I found this, I looked at the ingredients and felt that there are more healthy ingredients in this brownie than I can ask for. 

My older one who doesn't like banana in baked goods figured out the banana in these brownies and frowned at me but didn't refuse her portion :). My husband and the little one thoroughly enjoyed their share. And no one guessed the presence of Ragi flour in there. 
I felt the brownie as is was a little on the drier side but when combined with ice cream it was pure bliss!

Vegan Gluten Free Ragi Brownies

Ingredients - 

Ragi Flour 1 cup
Sugar 1/2 cup
Baking Powder 1 tsp
Cocoa Powder 3 Tbsp
Salt 1/2 tsp
Walnuts, chopped 1/2 cup (divided use)
Wet Ingredients - 
Bananas mashed 2 nos
Peanut Butter 3 Tbsp
Oil 1/4 cup + 1 Tbsp
Almond-Coconut Milk 1/2 cup (water can be used as well)
Chocolate Chips and chopped walnuts as needed for topping

Vegan Gluten Free Ragi Brownies

Method Of Preparation -


Preheat the oven to 375 °F. Grease and line a 7 inch square baking pan.

In a mixing bowl, add ragi flour, sugar, baking powder, cocoa powder, salt and half of the walnuts. Mix well and set aside.

In another mixing bowl, mash bananas, add in peanut butter, oil and almond-coconut milk. Mix well until the ingredients are all blended in.

Pour the wet ingredients into the flour mixture. Gently mix until there are no lumps.

Gently pour the brownie batter into the prepared baking pan.

Sprinkle chocolate chips and chopped walnuts on top as needed.

Bake for about 45 minutes or until a tester comes out clean upon inserting in the center of the brownie.

Remove from the oven. Let it cool for a few minutes.

Serve with ice cream.

Chocolate Popcorn And Nuts
Day 1 Week 4 of BM #53 - 

This week I shall showcase some quick and easy to make recipes which make a delightful snack while watching movies at home.

Whats a movie night without popcorn? That is the standard question from my kids. The typical masala popcorn didn't find its place in this series but I am sure I am going to blog about it soon.

This chocolate version sure won the hearts of the kids.

Ingredients - 

Popcorn 2-3 cups
Cashews and Almonds handful each
Chocolate Chips handful
Peanut Butter 1 Tbsp
Butter 1 tsp


Chocolate Popcorn And Nuts

Method Of Preparation -

In a double boiler or a microwave safe bowl, melt the chocolate chips, peanut butter and butter to get a flowy consistency.

Spread the popcorn in a tray/mixing bowl, drizzle the chocolate sauce over it and mix until evenly coated. It is a personal preference of how much chocolate needs to be coated.

Also dip the nuts in the chocolate sauce and spread them on a parchment lined tray.

Let it cool in the refrigerator for a few minutes.

Mix up the popcorn and the nuts and it is ready to be enjoyed!

Vegan Low Fat Peanut Butter Cookies

For Day 3 Week 2 of BM #36, here are some guilt free protein filled cookies for a snack..

If your kids love peanut butter, then these would be a treat for them. Typically, to eliminate fat in baking, we use any fruit puree. I didn't have bananas on hand to try it out with banana as the original recipe called for. But the addition of applesauce didn't disappoint me!


Vegan Low Fat Peanut Butter Cookies

Ingredients - 

Peanut Butter 1/2 cup (I used JIF natural creamy version) 
Sugar 3/4 cup (Use half 1/2 cup sugar and 1/4 cup brown sugar for a darker colored cookies)
Apple Sauce 3/4 cup (I used unsweetened)(Or use mashed banana)
All Purpose Flour / Maida 1 cup
Wheat Flour 1/2 cup
Baking Powder 1 tsp
Salt a pinch
Chocolate Chips 1/4 cup (Optional) (I used as a topping)(use non dairy version for vegan)


Vegan Low Fat Peanut Butter Cookies

Method Of Preparation -

Cream the peanut butter, sugar and apple sauce until light and fluffy.

In a separate bowl, whisk the flours, baking powder and salt.

Slowly add the flour mixture into the wet ingredients while mixing it gently. 

Mix well until the flour is incorporated well but don't over mix.

Preheat the oven to 375 °F.

Pinch approximately a tablespoon of dough and shape them into rounded discs. 

Place a chocolate chip on each of them and press down with a fork so as to flatten it slightly.

Arrange them on parchment lined trays spacing them about an inch or two apart.

Bake them for about 10-12 minutes until the undersides are slightly brown.

Remove and enjoy upon cooling.

Store the remaining cookies in air tight containers.
