Vegan Oatmeal Bars


I have always trying to make an oatmeal bar but somehow always ended up making cookies. This time around I made sure I baked these bars. 


Taste wise these were perfect. But I should have baked it for a few more minutes as the underside was still a little soggy and not as dry. So we made it a point to finish it off in 2 days. :)


Ingredients - 


Rolled Oats 1 1/2 cups
Nuts, Dried fruits and seeds 1 1/2 cups
[I used walnuts, almonds, pine nuts, sun flower seeds, dried cranberries, sesame seeds and coconut]
Cinnamon Powder 1 tsp
Salt 1/2 tsp [I forgot to add]
Brown Sugar 4 Tbsp
Soy Milk 1 cup
Flax seed meal 2 Tbsp +6 Tbsp of warm water


Vegan Oatmeal Bars


Method Of Preparation -


In a small bowl, soak the flax seed meal in warm water and set aside.


Preheat the oven to 350 F. Prepare a 9 x 9 pan by greasing it.


In a mixing bowl, add the oats, nuts, dried fruits and seeds. 


Sprinkle cinnamon and salt.


Whisk the flax seed mixture well until it is gooey and add brown sugar and soy milk and whisk well.


Add this wet mixture to the oats, mix well and pat the mixture into the greased baking pan. Make sure the mixture is patted down to about 3/4 inch.


Bake it for 45-50 min and remove. Slice it as per requirement upon cooling.

On a weekend we had a heavy brunch and were not in a mood to eat an elaborate lunch  I was not in a mood to cook an elaborate meal. So I decided to make a one pot meal leaving me time for some errands. So cooked up this Nut filled Rice which we all relished. Most importantly the little one who can't eat even a little spice took a second serving leaving me totally in awe! A simple fried rice with the addition of nuts gets transformed into a fantastic lunch !!


Mixed Vegetable And Nuts Rice


Ingredients - 


Basmati Rice 1 1/2 cups
Onions chopped 1/4 cup
Carrots cubed 1/2 cup
Peas 2  Tbsp
Edamame 1/4 cup
Raisins handful
Almonds chopped 7-8
Walnuts chopped 7-8
Cashews chopped 7-8
Peanuts 7-8
Sesame Seeds 2 Tbsp
Sunflower Seeds 2 Tbsp
Pine nuts 1 Tbsp
Ginger Garlic Paste 1 tsp
Garam Masala 1/2 tsp
Salt as per taste
Seasoning (Oil 1 Tbsp, Shajira 1/4 tsp, Cloves  3-4, Cinnamon 1 inch, Star Anise 2 petals, Cardamom 2 pods, Bay Leaf 1 )
Coriander leaves for garnish


Mixed Vegetable And Nuts Rice


Method Of Preparation -


Soak Basmati Rice in about 3-4 cups of water for about 20 min or so.


Meanwhile, in a  heated wok/kadai/sauce pan, add oil and the rest of the seasoning. After the shajira is brown enough, add ginger-garlic paste and onions and saute until the onions are golden brown in color.


Add all the nuts, raisins and seeds except the pine nuts and sunflower seeds. Saute them until they all get a golden hue.


Add the peas, carrots and edamame and fry for about 2 min.


Drain the Basmati Rice and fry along with the rest of the vegetables for a couple of minutes.


Now is the time to cook the rice. Use either the stove top method to cook the contents or If you are like me, transfer the contents to a rice cooker and add 3 1/2 cups of water and let the rice cooker do the job!


After the rice is cooked, transfer it into a serving bowl, and garnish with sunflower seeds and pine nuts. Optionally add coriander leaves!


Preparation Time 45 min 
Serves 3-4 Adults

I was looking at some international vegetarian cuisines and came across this Brazilian Orange Rice. Thats when I came to know that Brazilian staple food consists of Rice, Beans and of course meat. 
Also there are quite a few vegans out there and I found this recipe here. I have never experimented with Orange Zest (Grated orange peel). So I was looking at some recipes which demanded orange zest and found this one and this kind of suits our diet in that it is vegetarian and is rice based :) So check this out for a change. Also this was the first time I used pine nuts in my cooking..the crunchy pine nuts mixed with rice was a new experience and a very enjoyable one at that! The orangy aroma filled our kitchen while this was being cooked and it tasted just as flavorful!!



Ingredients - 

Water 3 cups
Basmati rice 1 1/2 cups
Salt as per taste
Olive oil 1 Tbsp
Chili powder 1 tsp (or as per taste)
Garlic powder 1/4 tsp
Brown sugar 1 tsp
Orange zest (tangerine is good, also) 1 tsp
Pine nuts 1/4 cup




Method Of Preparation - 

Combine Rice, Salt, Olive oil, chilli powder, garlic powder, brown sugar, orange zest and water and cook in rice cooker.


This can also be done on the stove top but cooking in the rice cooker is hassle free for me!


Toss in the pine nuts and give a gentle mix and serve. I served it with Raitha as we are used to that combo! Be creative and serve it according to your taste. I garnished with some orange pieces.
