During this festive season, it is becoming an increasingly difficult task to come up with sweets for naivedyam which are easy to prepare and delicious too (and guilt free too!!). So the other day in a casual conversation with my sister, Jaya, the same topic surfaced and she reminded me that I had made this dates laddu in our pre-blogging days and that she didn't remember the recipe. Thats when I looked up my notes and found that she was I did indeed make some kind of laddu with Dates. And thus, this laddu 'happened' and surely was enjoyed by all of us at home!
Ingredients -
Fresh Dates 10-12
Almonds handful
Cashews handful
Dry Coconut powder 4 Tbsp (3 Tbsp+1 Tbsp)
Cardamom Powder 1/4 tsp
Method Of Preparation -
Dry Roast Almonds and Cashews and let them cool. Dry roast 3 Tbsp of coconut powder but be careful not to burn it as we all know that coconut gets roasted real fast. (The best way is to switch off the stove and roast it in the hot pan while mixing continuously for a few seconds.)
Chop the fresh dates for easy grinding.
Grind the almonds, cashews and coconut powder and add the chopped dates to it and grind it further until a thick dough is formed. Mix in the cardamom powder also.
With all this grinding, the natural oils in the almonds and cashews ooze out giving a nice aroma.
Remove the dough from the grinder/mixer/blender and knead for a minute or two to make it a little pliable.
Make laddus out of the dough and roll each of them on the remaining coconut powder. I offered these to 'The Goddess' and later we all enjoyed those!
