For the final day of this week long BM #6 session 2, I have been paired with Divya of Dilse. If you have followed the rules from the previous week, you already know how this works. For the others, this means we need to pick up a recipe from each other's blog which suits our respective themes, cook and post it here. I have posted this as part of 'Seven Ways of Using an Ingredient'. But it sounds irrelevant for this post and so I can post any recipe, I suppose! In the ocean of recipes at Divya's blog, I had to sift through so many mouth watering recipes and finally decided that these Brown Rice Adais are the best bet for me.
As I am constantly in need of breakfast recipes, it suits my requirement. Moreover Adais in general have not been made in my kitchen so far. (I mean, the traditional one with red chillies being incorporated in the batter and so on). So thanks to this Marathon and Divya's recipe, we got to enjoy yet another variety of Dosa!! I have added a couple more dals and also fenugreek seeds to suit our taste.
Ingredients -
Brown Rice 1/2 cup
Toor Dal 4 Tbsp
Urad Dal 4 Tbsp
Moong Dal 4 Tbsp
Fenugreek Seeds 1 tsp (Optional)
Cumin seeds - 1 teaspoon
Asafoetida/Hing - 1/2 teaspoon
Ginger - 1/2 inch
Onions, finely chopped 1/2 cup (Optional)
Dried red chillies - 2 (or more as per taste)
Salt to taste
Coriander leaves few (Optional - I didn't use)
Method Of Preparation -
Soak the Dals, Brown Rice, fenugreek seeds and red chillies together for atleast 2-3 hours. I soaked overnight
Drain the water. Wash the soaked dals and rice again with clean water.
Grind them together adding ginger, to a smooth batter adding as much water as required to get a batter of pour-able consistency.
Add the chopped onions, salt, and cumin seeds to the batter.
On a heated griddle/tawa, add a ladle ful of batter in the center and briskly spread in circles with the back of the ladle.
Drizzle a little oil if preferred. After the underside is cooked and looks brown, flip it onto the other side to cook.
Remove from the tawa and continue making more adais with the rest of the batter.
Serve the Adais with chutney of your choice. I served with Peanut Chutney.

One of my favorite dosas, Harini. Infact I love them more than a masala dosa.
My mother makes karam dosa - a version of adai I can say.
You don't need any chutney for it since more red chillies are added. Add a handful of cilantro and curry leaves each to the batter and you will end up with awesome dosas. Those two ingredients make all the difference.
So tempting and delicious adai.. simply inviting dear !!

I always ferment the adai batter just like dosa batter and use it. Texture comes out softer with it. Nice ones.
