I always bought pizza sauce whenever I planned to make pizza at home. Convenient, right? But these days 'home made' bug has bitten me and I am making stuff like this sauce at home! This Pizza sauce is the result of the 'bug bite'. I found that it was incredibly easy to make it at home giving you the flexibility to add/adjust the flavors to suit your taste.
I agree the color of the sauce is not as 'deep red' as I might have liked. I attribute the loss of color to the type of tomatoes used and/or to the absence of paprika/cayenne. Nonetheless, it was full of flavor from the herbs and spices used. S has declared that this sauce can become the de facto standard [if there is any such thing at all :)].
Ingredients -
Tomatoes 4 large
Basil, dried 1 tsp
Garlic 2 cloves
Oregano, dried 1 tsp
Cilantro/Coriander leaves , finely chopped 2 Tbsp
Salt 1 1/2 tsp (or as needed)
Pepper as needed
Red Chilli Powder / Cayenne 1/2 tsp (or as needed)
Sugar 1/2 tsp (Optional)
Olive Oil 1-2 Tbsp
Method Of Preparation -
Blanch the tomatoes, peel the skin and blend the tomatoes into a coarse puree. [I sliced the tomatoes into 2 and microwaved it for 3-4 min, skinned them, chopped them and pureed them]. Blend in coriander leaves and chopped garlic cloves also.
In a heated saucepan, heat oil and let this puree simmer and thicken (it took me about 5-6 min).
Add the herbs, salt, red chilli powder and sugar. Adjust to taste and remove from heat.
This sauce can be used in making a Pizza as I did or as a dipping sauce for bread sticks.
This can be stored in the refrigerator for 4-5 days.
Preparation Time 20 min
Makes 1 cup approx

Simple pizza sauce. I would have never thought of making it at home till i saw ur post. it looks delicious. will def try this at home.
