Stir Fry Vegetable Pizza with Oat Bran Crust

I saw the combination for the pizza crust in a book from the library a long time back and roughly jotted down the ingredients. This is for Day 2 of BM #35.

This was an experiment which was more or less accepted at home. But the edges turned out a little too crispy for our comfort. So I had to trim the edges and serve.

Ingredients - 

Oat Bran 1 1/2 cups
Fine Semolina 1 cup
All Purpose Flour/Maida 1 cup
Coriander-Mint Chutney 2 Tbsp (or more)
Salt as needed
Sugar 1 tsp
Yeast 1 Tbsp
Olive Oil 2 Tbsp + 1 Tbsp while kneading
Pizza Sauce 4-5 Tbsp
Stir Fried Vegetables 2-3 cups (Chestnuts, carrots, bell peppers, onions, baby corn, broccoli, beans, sugar snap peas)
Cheese 1/2 cup (I used a five cheese blend)


Stir Fry Vegetable Pizza with Oat Bran Crust

Method Of Preparation -
Prepare the dough - 
In small bowl of warm water, add 1/2 tsp of salt, 1 tsp of sugar and the yeast. Let it froth up in a warm place for about 7-10 min. 

In another mixing bowl, add in the all purpose flour, oat bran and fine semolina and salt. To this mixture add the proofed yeast solution, warm water and knead into a soft pliable dough. 


Mix in the coriander-mint chutney and olive oil. If it gets too sticky, apply oil to your hands and knead for about 10 min.

Oil the bowl and the dough (to keep the dough from drying out) and cover it with an oiled cling film. (I used a deep bowl as a lid.)

Keep the covered dough in a warm place undisturbed for about 2 hours or until the dough doubles. [I left it for 4 hours]

Once the dough gets doubled, on a cornmeal dusted surface (I used a pizza pan) , roll the dough into a large circle about 1/2 inch thick.

Prepare the toppings - 
Saute the stir fried vegetables until they are crisp. Set aside.

Assemble the Pizza -
Pinch the edges of the circle to create a border. Poke the entire surface of the circle with a fork to bust any bubbles which might form when baked.

Preheat the oven to 425 F.

Apply the pizza sauce all over the circle and layer the stir fired vegetables and olives.

Sprinkle the cheese as needed.

Bake in the center rack for about 18 min or until the top cheese layer browns a little.

Remove and slice. Serve hot.

  7. Colorful & healthy pizza crust! The beauty about home made pizzas is we can adjust the amount of cheese that goes in it.

    I rarely make pizzas at home as I am the only one who ends up eating it, but this year I bought a set of pizza pans on sale during cyber Monday. I have to try this crust to put those pizza pans to use.
