After a long time I have somehow managed to make this pickle for Indian Cooking Challenge announced for the month of February 2014.
This recipe has been suggested by Varada, our newest member in this club. This recipe is tried and tested by her mom. Thanks to her we got to taste this finger licking pickle. We usually make this pickle without the jaggery. But adding the jaggery has given it a totally new dimension.
I am sure I am going make this with green mangoes when they appear in our markets here.
Ingredients -
Green Apple finely chopped, 1 1/2 cups
Mustard Seeds 1 1/2 Tbsp
Fenugreek Seeds 3/4 tsp
Red Chilli Powder 1 Tbsp
Salt 3 tsp (or to taste)
Jaggery 4 Tbsp
Seasoning (Oil 3 Tbsp, Mustard seeds 1 Tbsp, Asafoetida 1/4 tsp, Turmeric 2 tsp)
Method Of Preparation -
In a heated pan, add oil and the seasoning ingredients. After the mustard seeds pop, remove and let it cool.
Meanwhile, grind mustard seeds, fenugreek seeds, turmeric, red chilli powder, salt and jaggery. Add about 3 tablespoons of water and make sure it is a fine paste.
Add the above ground masala to a mixing bowl with the chopped green apple in it.
Pour the cooled seasoning on top and mix well.
Store in an air tight container and serve as needed.

Makes 1 1/2 cups approx

After seeing pickles with the apple, I am tempted to do that..:)..that bowl looks so fetching harini..
