Khurmi

Welcome to the state of Chattisgarh, which is relatively a new state formed in 2000 carved out of the state of Madhya Pradesh. 

My personal connection to Chattisgarh is through my brother who lived in Bilaspur for more than 5 years and contributed a lot in the automation of lot of financial services in his department. They have forged many friendships in the area and are very attached to the place as well. It is unfortunate that I haven't had the opportunity to visit them while they were there.

It is known as the rice bowl of Central India and most of the food is rice or rice flour based. But today's dessert/snack recipe is an exception as it is wheat based! Trust me when I say that these are extremely addictive and healthy as well.

While you check out these Khurmis, I shall make sure that our next leg of the journey goes unhindered!

Ingredients - 

Wheat Flour 3/4 cup
Jaggery 1/2 cup
Ghee 1 tsp
Sesame Seeds 1 Tbsp
Water to knead a stiff dough
Oil to deep fry 


Khurmi

Method Of Preparation -


Melt the jaggery adding very little water and strain to remove any impurities. 

In a mixing bowl, add wheat flour, sesame seeds, ghee and the molten jaggery. Knead into a stiff dough adding water if needed.

Heat oil in a kadai/wok. 

Pinch 6-8 equal portions of the dough and make them into oblong shaped discs which are slightly on the thicker side.

Gently slide these into the medium hot oil and let them fry in low-medium heat so the khurmis are cooked through.

Remove from the oil once they are uniformly browned and drain the excess oil onto paper towels.

Serve them warm for a filling and nutritious snack.

  11. This reminds of another dish..similar to this from another state...they have very little difference and yet are called by different names...what diversity! The sweet looks interesting.
