Lucknowi Dahi Vade

Finally after covering all the 'Seven Sisters', it feels like we have captured the world! Now onto Uttar Pradesh. 

This state has been in the center of Indian History and Mythology. The land of Lord Ram, home to many historical happenings and lots of places of worship - Uttar Pradesh.

Their cuisine is multi faceted. So many influences in their cuisine and they have one of the richest variety. Here is a very unique one which was a delight to have!

Enjoy this burst of flavors as I move on to the neighboring state of Uttarakhand formerly Uttaranchal.

Lucknowi Dahi Vade

Ingredients - 

Urad Dal, soaked for 2-3 hours 1 cup
Salt as needed
Oil to deep fry
For the Dahi - 
Yogurt/Curds 2 cups or as needed
Cumin seeds, roasted and coarsely crushed 1 tsp
Tamarind-Date Chutney as needed
Black Salt as needed
Salt as needed
Red Chilli Powder as needed
Coriander leaves, finely chopped 2 Tbsp
For the Filling - 
Onions, finely chopped 1/4 cup
Almonds, coarsely crushed 1 Tbsp
Cashews, coarsely crushed 1 Tbsp
Green Chillies, chopped as needed
Ginger, grated as needed
Coriander leaves, finely chopped 2 Tbsp
Salt as needed

Method Of Preparation -

To Prepare the filling - Mix all the ingredients listed under 'For the Filling' and set aside.

Drain the soaked urad dal and grind into a smooth paste adding as little water as possible.

Whisk the batter adding salt until the batter is fluffy.

Meanwhile, heat the oil in a kadai/wok.

To Make the Vadas, Use a thick plastic sheet or a cut up ziplock cover to shape the vadas.

Spray oil on the plastic sheet, using wet fingers, take a tablespoon of batter, flatten it and put a 1/2 teaspoon of filling, pat another 2 teaspoons of batter to cover the filling. Make sure the filling doesn't leak out.

Gently peel out the vada and slide it into the hot oil. Add as many vadas into the oil as the kadai/wok can handle and fry them until all of them are uniformly browned.

Remove them onto paper towels and after a minute or two, dunk them in cold water. Let them soak in water for about 10-15 minutes.

Squeeze out the water from the soaked vadas. Arrange them in a wide dish. 

Prepare the beaten yogurt by adding salt and black salt. Pour it on the vadas. Sprinkle roasted cumin, red chilli powder, tamarind-date chutney and coriander leaves.

Let it sit in the refrigerator for a couple of hours.

Serve it cold as an appetizer or a snack.
