Honey Roasted Almonds

For Day 3, Week 3 of BM #42, check this awesome snack which is healthy and addictive. The subtle hint of salt, lightly sweet with the crunch of almonds, makes this a very interesting snack.

It is ideal to pack for the kids' school snack boxes or even to take it to work. Have a small box full of these in the car for emergencies :). But dieters out there, keep in mind the calories they can pack.



Oh! This reminds me that I need to make another batch for my little one's birthday party this evening..

Ingredients - 

Almonds 2 cups
Honey 3 Tbsp
Sugar 3 Tbsp
Water 2 Tbsp
Oil 2 tsp (I used Olive Oil)
Salt 1/2 tsp (I used sea salt)
Cinnamon, powdered 1/2 tsp
Nutmeg, powdered 1/4 tsp


Honey Roasted Almonds

Method Of Preparation -


Arrange all the almonds in a single layer on a baking tray.

Put it in the cold oven and set the temperature to 350 °F.

While the almonds are in the oven, blend salt, sugar, cinnamon powder and nutmeg powder and set aside.

Stir the almonds a couple of times until the temperature in the oven reaches 350 °F.

Remove from the oven and set aside.

In a wide pan, boil water, oil and honey. After the mixture comes to a rolling boil, add the almonds and stir well so that the almonds are coated with the honey mixture. 

After the liquid is fully absorbed by the almonds (typically 4-5 minutes), remove from fire, sprinkle the sugar-salt mixture and mix well so the almonds are coated with the sugar-salt mixture uniformly.

Keep a baking tray lined with parchment paper and transfer the honey roasted almonds on to the tray and spread in a single layer. 

Let them cool for a few minutes before transferring into an air tight container.
