Cheesy Potato Soup

E for Ecuador! Soups form a very important part of Ecuadorian cuisine. Apparently there are many regional variations to this soup.

What I found very intriguing is that the cheese in this soup is sometimes replaced with freshly ground peanuts. It is replaced if cheese is not affordable.

Check out this soup which was very popular with the kids. To me it felt more like a thinner version of potato curry :). My husband loved the addition of cheese, avocado and the hot sauce.

Ingredients - 

Potatoes, chopped 1 1/2 cups 
Onions, chopped 1/2 cup
Vegetable Oil 2 tsp
Garlic cloves, grated 1 tsp
Cumin seeds 1 tsp
Annatto 1/2 tsp (I used Turmeric instead)
Water 2 cups
Milk 1/2 cup
For Garnish -
Cheese 1/2 cup
Cilantro, chopped 2 Tbsp
Avocado, cubed, 1/4 cup



Method Of Preparation -


In a stock pot, heat oil and saute cumin seeds, onions and garlic until the onions are translucent.

Add the chopped potatoes and mix well.

Add water and turmeric. Cover and cook for about 10 minutes until the potatoes are cooked through.

Reduce the flame, add milk and let it simmer for 5 more minutes.

Add salt and remove from fire. Feel free to add about 1/4 cup of cheese and mix well.

While serving in individual bowls, sprinkle cheese, cilantro and add in a few cubes of avocado.

    @Archana - Spray lime/lemon juice on the avocado so it doesn't blacken.
