BM #92 Day 21 - 

As we are nearing the end of this series, the difficult letters are coming upon us. For the letter U, I chose to do Upwas Puran Poli. This version has dates and nuts as a filling and the outer layer of rajgira flour(amaranth flour) and mashed potatoes.

This was one of the toughest flatbreads I have ever attempted. First, the dough wouldn't come together as it is a gluten free flour. Even upon adding mashed potatoes, it was very tough to manage it. Second, the rolling was very difficult as it was falling apart. So I had to use greased sheets, a combination of patting down and using the rolling pin and then fixing all the cracks with greased fingers. The first one took a long time as I had to figure out the best way to make it all stay together. 

Also this was my first time working with Rajgira flour. The flavor and texture are all new to me. The earthy, nutty smell and taste of the Rajgira flour needs some getting used to.

Ingredients - 

Rajgira Flour 1 cup
Potato, peeled, cooked and mashed 3/4 cup
Ghee / Clarified butter 2 tsp + more to shallow fry
Sendha Namak 1/4 tsp (Optional)
For the Filling - 
Dates 10-12
Almonds handful
Cashews handful
Cardamom Powder 1/2 tsp

Method Of Preparation -
Prepare the filling  -
Pulse the dates, almonds, cardamom powder and cashews together until they form a stiff mixture. Make 8 equal portions and set aside.

Prepare the Puran poli - 
In a mixing bowl, add rajgira flour, mashed potatoes and ghee. Gradually add milk/water as needed to knead into a pliable dough.

Make 8 equal portions and knead each of them separately so there are no cracks.



Take one portion at a time, flatten it slightly and put in the filling portion, gather the edges and using a greased plastic sheet pat down with your fingers until the dough resembles a thin disc.

Transfer the disc onto a heated griddle and cook on one side. After the underside is cooked, flip it carefully, spread some ghee and cook the other side. Remove and continue with the rest of the portions of dough.

Serve warm with ghee.

  5. Yes it sure is a task working with Rajigiri flour ,but must say you have done a tremendous job with it . Who can make out that it had cracks and you repaired them ? Even the step by step pics look perfect .

  6. Rolling out gf flour paratha itself is super hard. Making it with a filling will be harder an you have made them so good Harini. The polis look so good. A perfect healthy treat for those who are so health conscious.

  12. Wow Harini what a fantastic innovative flatbread recipe. Stuffing the rajgira roti with a sweet filling and rolling it again must have been so difficult. A good sweet treat for fasting days.

  20. The filling is definitely delicious Harini. I ahve never used Rajgira flour but used other gluten fere flours to know how hard the rolling out part is! But you have done a good job with the Poli.

     
  21. Harini, I can do upwas any day if I get to eat these yummy poli for the day. What a flavorful upwas poli this is and a great use of rajgira flour.
