BM #116 Day 10 - 

Today is the 6th thali in the category of Simple everyday thalis. This is a very special thali as I have used our freshly harvested raw tomatoes to make Raw Tomato Chutney, Raw Tomato Curry With Moong, and Raw Tomato Dal. Also in the picture are Rice, Yogurt, Mango Fruit Salad, and Uppu Mirapakai (Mor Milagai).

This Mango Fruit Salad is a perfect recipe for a make ahead dessert for a party. Thanks to Sandhya for helping me with the recipe and giving me tips which helped me rest easy.

The measurement for each of the ingredients given in the recipe is just a rough guideline. Feel free to play around the quantities of each of them. It is a simple, no-nonsense recipe. I have since referred this dessert to so many of my friends and family.

We will take a break for Saturday and come back on Sunday with yet another theme for week 3.

Week 2 - Simple Everyday Mini Thalis

Ingredients - 

Mixed Fruits 3-4 cups (I used apple, banana and grapes)
Mango Pulp about 2 cups (I used the unsweetened Mango Pulp)
Condensed Milk about 1/2 cup
Whipped Cream about a cup

Note - Freel free to adjust the ingredients as per taste. There is no rule for the proportions.



Method Of Preparation -

In a large mixing bowl, whisk together gently the mango pulp, condensed milk and whipped cream until they are combined well and they appear creamy.

Wash and chop all the fruits into bite size pieces.

Toss in the fruits and mix gently. We like to have more fruits with a light coating of the creamy mixture. So adjust accordingly.

Cover and refrigerate for a few hours before serving. It stays good for upto 3-4 days when stored properly in the refrigerator.

BM #106 Week 3 Day 3 - 

For today I have these delicious brownies which my kids couldn't have enough of. They are simple to bake and my little one wants to bake these as soon as possible again.

I have altered the quantity of cocoa powder to suit my kid's tastes. The flour and cocoa powder can be used in equal proportions also.

Ingredients - 

Maida / All purpose flour 3/4 cup
Cocoa Powder 1/4 cup
Baking Powder 1/2 tsp
Baking Soda 1/4 tsp
Salt a pinch
Butter 1/2 cup
Sweetened Condensed Milk 1 can 
Yogurt 2 Tbsp (I used Greek Yogurt)
Hot Water 1/4 cup (Add more if needed)
Chopped Walnuts 1/4 cup



Method Of Preparation -


Preheat the oven to 350 °F.

Sift the flour, cocoa powder, baking powder and salt in a mixing bowl. Sprinkle half of the chopped walnuts.

In another bowl, whisk the butter, condensed milk, yogurt, hot water.

Mix the wet and dry ingredients gently until combined into a stiff batter.

Grease a baking tray and pour the batter. Sprinkle the remaining chopped walnuts on the batter.

Bake in the middle rack for about 25-30 minutes. Check with a toothpick to see if it comes out clean when inserted in the middle.

Remove from the oven. Allow it to cool. Slice and serve with ice cream.

BM #106 Week 2 Day 2 - 

For the steamed dishes, today I have this heavenly steamed dessert which can be served warm or chilled.

With very basic ingredients this dessert can wow your family and friends. I have used custard powder instead of cornstarch and vanilla essence. I have used raw sugar instead of white sugar. Is that why the caramel didn't color well? Experts, please chime in on the reason.

Caramel color apart, the desert was all that you expect. A mildly sweet melt-in-the-mouth delight.

Ingredients - 

For the Caramel - 
Sugar 1/4 cup
Water 1 tsp
For the Custard - 
Milk 1/2 cup
Yogurt 1/2 cup (I used Nonfat Greek Yogurt)
Condensed Milk 1/2 cup
Custard Powder 1 1/2 Tbsp


Method Of Preparation -


In a mixing bowl, whisk all the ingredients listed under 'For the Custard'. Set aside.

To prepare the caramel, heat a pan with sugar and water. Mix until the sugar melts and changes color. Remove from heat and transfer into steamable containers. I used mini Silicone muffin cups.

Fill the silicone cups with the custard mixture.

Place them on a steamer rack and steam for about 25 minutes.

Allow the steamer to cool for a few minutes. The custard can be refrigerated to serve them cold.

Slowly invert the custard cups onto serving platters and serve.

BM #91 Week 3 Day 3 -

To conclude this series of baked treats for the Kid's Delight event, here are some healthy and kid friendly carrot muffins.

My little one never gets bored trying out new versions of muffins and if I let her decorate those cupcakes/muffins, all the more happy. These muffins tempted my older one too.

Ingredients - 

Whole Wheat Flour 1 cup
Maida / All Purpose Flour 1 cup
Baking Powder 1 tsp
Baking Soda 1 tsp
Carrots, grated 1 1/2 cups
Walnuts, chopped handful + more for topping
Oil 1/4 cup
Condensed Milk 1 can



Method Of Preparation -


Preheat the oven to 350 °F. Line the muffin pan. 

Whisk the condensed milk in a mixing bowl until light and fluffy. [I used an electric beater for 2-3 minutes].

In another bowl, sieve together the flours, baking powder and baking soda. Mix in the carrots and chopped walnuts. Set aside.

Add oil to the condensed milk and whisk until incorporated.

Slowly add the flour mixture while beating the condensed milk.

Continue beating until well combined.

Divide the batter into the muffin pan and bake for 22 minutes or until the toothpick comes out clean. I checked once at 17 minutes and then at 22 minutes.

Serve warm with milk for a filling snack.

BM #90 Week 2 Day 3 - 

To conclude this month's series 'Instant dishes', here is a personal favorite. This version of kalakand is a great way to enjoy the last few mangoes of this season.

I remember my mom slogging in front of the stove to make kalakand the old-fashioned way. Now when it is my turn to make it, I always look for easy and quick ways to enjoy such treats. 

My family and friends enjoyed this mango kalakand.

Ingredients - 

Mango Pulp 1 1/4 cup (I used store bought pulp)
*Paneer 1/2 cup
Milk Powder 3/4 cup
Condensed Milk 1/4 cup (adjust as per the sweetness of mango pulp)
Cardamom Powder and Chopped Nuts for Garnish

*I used homemade soft paneer from 1 liter low fat milk (2%). Store bought grated paneer can also be used.


Method Of Preparation -


In a microwave safe deep bowl, add the mango pulp and microwave in high power for 3 minutes.

Remove, mix and add in the soft paneer and milk powder. Whisk well and zap for another 2 minutes.

Remove, mix and cook for 2 more minutes.

Remove, add condensed milk, mix and cook for 5 more minutes in 1 minute intervals. Make sure the mixture doesn't overflow.

When the mixture is semi dry and looks grainy, it is done. Ensure that it the mixture is not totally dry.

Transfer the mixture onto a greased container. Pat it evenly. Sprinkle the cardamom powder and chopped nuts. Allow it to rest/cool for a few minutes.

Slice and enjoy.

BM #86 Week 2 Day 3 - 

Here is another sweet perfect for any festive occasion. Here I have used low fat ingredients to achieve a rich dessert. 

I sometimes make khoya and add it instead of adding the milk powder in the halwa. That also tastes good. 
Ingredients - 

Carrots, peeled, shredded 4 cups
Milk 1/4 cup
Milk Powder 2 Tbsp
Condensed Milk 1/2 tin (I used fat free)
Almonds, coarsely crushed 3 Tbsp
Raisins and Cashews, Roasted for garnish



Method Of Preparation -


Pressure cook the carrots and milk for 15-20 min (2-3 hisses). 

In a heated pan, add ghee and condensed milk. Stir gently and let it cook for a few minutes.

Add in the milk powder, crushed almonds and boiled carrots along with the milk.

Keep stirring until the mixture comes together as a single mass. 

We like it a little more grainy. So I stirred for a few more minutes to get the texture we prefer. Remove from heat.

Garnish with roasted cashews and raisins.

Serve hot or cold.

Eggless Steamed Milk Pudding

BM #74 Week 2 Day 3 - 

Here is yet another pudding which was a delightful find from various sources on the internet. My first attempt without condensed milk and yogurt turned out good but it wasn't holding up the shape. So didn't take pictures but silently enjoyed it :).

I should try that combination again and see how I can make the pudding firm. Anyway that is for another time. For today enjoy this version of the steamed pudding.

Ingredients - 

Milk 3/4 cup
Custard Powder 2 tsp
Condensed Milk 3/4 cup
Yogurt, thick 3/4 cup
Cardamom powder 1/4 tsp (Optional)
Chopped Nuts for garnish


Eggless Steamed Milk Pudding

Method Of Preparation -


In a mixing bowl, whisk the custard powder and milk so there are no lumps.

Pour in the condensed milk and thick yogurt. Using a whisk or an immersion blender, blend the mixture until smooth and silky.

Pour into into small silicon cups or ramekins and steam for about 15 minutes.

Remove from the steamer after a few minutes and allow to cool. Refrigerate for an hour and serve chilled.

Chocolate Coconut Laddu

BM #74 Week 1 Day 2 -

For the second day a similar treat to yesterday's Chocolate Peda but the coconut in these laddus take it a notch higher :).

I am just trying to use up the hot cocoa mix which is lying in my pantry but it can be safely substituted by the regular cocoa powder.

Ingredients - 

Condensed Milk 6 Tbsp
Coconut Powder 2 cups + 1 tsp for rolling
Almonds crushed 2-3 Tbsp
Hot Cocoa Mix 2 Tbsp


Chocolate Coconut Laddu

Method Of Preparation -

In a heated pan, add condensed milk and stir. After it is slightly warm, add in the nuts, coconut powder and mix well until it slightly firms up. (About 3-4 minutes)

Reduce the heat. Add in the hot cocoa mix and stir well until incorporated.

Remove from heat and let it cool for a few minutes.

While it is still warm, pinch bite size portion of the mixture and roll into any shape of your preference and set aside.

After all the mixture is shaped up, roll each of them on coconut powder and set aside.

Enjoy immediately or refrigerate in an air tight container for later use.

Mango Doodh Peda

BM #73 Week 2 Day 2 - 

For the second sweet treat in this series, check out this mango flavored doodh peda which is a delight to have and can be whipped up in under 30 minutes.


Mango Doodh Peda

Ingredients - 

Milk Powder 1 cup
Milk 1/4 cup
Ghee/Butter 2 tsp
Mango Pulp 1 1/2 cups
Sweetened Condensed Milk 3/4 cup
Coconut Powder 1/2 cup
Roasted Cashews for topping


Mango Doodh Peda

Method Of Preparation -


Make a smooth paste of ghee, milk powder and milk. Set aside.

In a heated non stick pan, cook the mango puree until it thickens a little about 3-4 minutes.

Add in the milk powder paste and cook the mixture while whisking it vigorously. Then add in the condensed milk and the coconut powder. 

Keep mixing it and making sure the underside doesn't get burnt. [It took about 10-12 minutes]

After the mixture comes together as a single mass, transfer onto a greased plate and allow it to cool.

When it is slightly warm, pinch small portion of the mixture with greased hands and roll into a smooth ball and press down a cashew to slightly flatten it. Continue to shape the rest of the mixture similarly.

Serve as a dessert. Perfect for parties / religious events.

Condensed Milk Cookies - Eggless

BM #72 Week 4 Day 1 - 

This week I shall clear some of my bookmarks. I had baked these cookies 2 times in 2 days owing to its popularity. My kids were after me to bake some cookies for the Christmas season and I took that opportunity to bake 3 different kinds of cookies. 

The kids wanted to decorate in Christmas colors so I got some off the shelf frosting for them to play around. Also I took these cookies for a Christmas party and let the kids have fun decorating them.

I must say these condensed milk cookies have had very good reviews from both family and friends. 


Condensed Milk Cookies - Eggless

Ingredients - 

*Maida / All Purpose Flour 1 1/2 cups
Salt a pinch
Unsalted Butter at room temperature 1/2 cup
Sugar 1/4 cup
Condensed Milk 1/2 cup (200 gms approx)

* I used Whole wheat flour and All purpose flour in equal proportions.

Condensed Milk Cookies - Eggless

Method Of Preparation -


Sieve flour and salt and set aside.

In a deep mixing bowl, use an electric mixer to whip butter and sugar and condensed milk until light and fluffy.

Add in the flour little by little until well combined and a soft dough is formed.

Preheat the oven to 350 °F.

Scoop out tablespoon of the dough (I flattened them slightly for the second batch) and arrange them 2 inches apart on a lined baking sheet. 

Bake for 2-15 minutes. Let them stay on the sheet for a couple of minutes. Remove and place them on wire racks.

Decorate them and enjoy!!
