The combination of orange and pistachios intrigued me and so I tried them out for the kids. I also was wondering about the usage/relevance of sooji/semolina in these cupcakes. Any thoughts on those are definitely appreciated.
The kids are happy as long as they are cupcakes and they taste good. The kids had a blast decorating them as well.
For Day 3 Week 4 of BM #28, here are the cupcakes..

Ingredients -
All purpose flour/Maida 3/4 cup
Roasted Semolina/Rava/Sooji 1 Tbsp
Baking powder 1½ (one and half) teaspoon
Baking soda ¾ tsp
Salt pinch
Fresh Orange Juice ½ cup
Powdered Sugar ¾ cupButter ⅓ cup
Warm water ½ cup
Orange zest 1 Tbsp (I didn't use)
Pistachio and raisins, chopped 1 Tbsp each
Method Of Preparation -
Sieve all purpose flour, baking soda, baking powder in a bowl. Add salt, sooji, chopped pistachio, raisins, orange zest (if using), powdered sugar, and mix well.
Beat the softened butter, warm water and orange juice and mix into the flour mixture to make the cake batter.
Preheat the oven to 375 F and prepare the muffin plate by arranging the cupcake liners in each of them.
Divide the batter into each of the muffin cups until they are about 3/4ths full.
Bake for about 35 min or until a tester comes out clean.
Cool on a wire rack and enjoy! I let the kids decorate and have fun.

Interesting combination orange and pista, cakes looks super soft, yesterday only heard from a friend about rava in cake she said instead of egg and butter they used it, but I am not sure about the quantity. Bookmarking.
I remember seeing a lot of rava in eggless cakes when I was younger esp .on the cover of cocoa packets. Not sure why though. The cupcakes look so nice and orange -pista sounds like a good combo. Wish you'd put up pics of your kids'decorations
i made something recently with orange juice , the texture of my cupcakes made me wonder whether i should be using lesser fats when i add orange juice, coz it was way to buttery, did u have similar experience or was it fine, i am just trying to figure out the culprit, i liked the combination of orange and pista
The first cupcakes I learnt to bake and are a hit even now also has orange juice in the recipe and I have baked them with nuts and dried fruits. And so I can imagine how yummy these must have been.
