Here is another version of kootu which we enjoy at home. This is a very simple kootu where there is no roasting of dals/spices is involved. We love it for its simplicity. If you love the taste of poppy seeds, then it is a must try!!

Ingredients -
Pumpkin, cubed 1 1/2 cups (I used red pumpkin, the white one would be good too)
Toor Dal 3/4 cup
Salt to taste
Turmeric 1/4 tsp
Seasoning (Oil 2 tsp, Cumin Seeds 1/2 tsp, Mustard seeds 1/2 tsp, Curry Leaves few, Asafoetida 1/8 tsp)
Masala to Grind -
Poppy Seeds 1 tsp
Green chillies 3-4 (or to taste)
Coconut, grated 2 Tbsp
Method Of Preparation -
Pressure cook toor dal until cooked well. Boil pumpkin separately until just about tender.
Grind the ingredients listed under 'masala to grind' adding a little water and set aside.
In a heated pan, add oil and the rest of the seasoning. After the mustard seeds crackle, add the ground masala paste and saute for a few seconds.
Add the turmeric, cooked pumpkin, cooked dal and salt. Mix well and let it simmer until the flavors blend.
Remove from fire and serve it hot with rice.
