Here is yet another delightful vegetable-lentil medley which has already become a family favorite.
This is supposed to be a traditional Sindhi Variety which we have since adopted :).
There are so many Sindhi Dishes which I have bookmarked and made some too. I am sure I will get another opportunity to post those !
So check it out for Day 3 Week 1 of BM #28.

Ingredients -
Mixed Vegetables (I added Chow Chow, Carrot and Potatoes) 2 cups
Spinach, chopped 1 cup
Tomatoes , chopped 1/4 cup
Onion, chopped 1/2 cup (I didn't use)
Spring Onion, chopped 2-3 Tbsp
Kasoori Methi 1 tsp
Chana Dal 1/2 cup
Green Chillies-Ginger-Garlic paste 2 tsp (or to taste)
Salt and Red Chilli Powder to taste
Seasoning (Oil 2 tsp, Cumin seeds 1/2 tsp and Minced Garlic)
Method Of Preparation -
Pressure cook all the vegetables (Chow Chow, Carrot, Potatoes, Tomatoes, Spinach, Spring Onions and onions if using), Chana Dal, Kasoori Methi, Salt, Turmeric and Green Chilli-Ginger-Garlic paste.
Mash the dal mixture if preferred. I opted to leave it as is.
In a heated pan, add oil and cumin seeds. Saute minced garlic and season the dal. I opted to transfer the dal into the seasoning and simmer it for a few more minutes.
Serve it with Rice and enjoy!

this is a super healthy dish...best for kids rice combo
Yes it is one of the top listed Sindhi dish. Try mashing up the veggies next time, you will surely like the change.
Seems like the dish came straight off the stove with steam and all that. :)I too find many dishes can be adapted in my kitchen as well since the less usage of all that spicy powders.
This is one of the dishes that has been on my to-make list almost forever. Yours looks delicious. I'm finally planning to make it for BM in 2 weeks.
