I somehow like Biscottis better than cookies. I feel that they are more like crispy cakes :). The kids, like me love the biscottis. (though they like cookies and cakes as well!)
Anyway I made these for them as an after school snack and they munched them with their share of milk without any complaints.

Recipe Source - Here Ingredients -
Wheat Flour 1 cup (I used Multi Grain Atta)
All Purpose Flour / Maida 1/4 cup
Baking Powder 1 tsp
Baking Soda 1/2 tsp
Cinnamon 1 tsp
Raisins 1 Tbsp
Salt a pinch
Sugar 1/2 cup
Oil 2 Tbsp
Yogurt / Curds 2-3 Tbsp
Zucchini and Carrot, Grated 1 cup (I used 1/2 zucchini and 1 carrot)
Method Of Preparation -
In a mixing bowl, add the flours, baking powder, baking soda, cinnamon, salt, sugar and raisins.
Whisk the flour and set aside.
In a different bowl, mix in the grated zucchini, carrot, oil and yogurt.
Transfer the liquid content into the flour and gently mix to get a stiff dough.
Preheat the oven to 375 F. Line a baking tray with parchment paper.
Transfer the dough onto the baking tray and shape into a rectangular block 7 X 3 and about 3/4 inch thick.
Place it in the middle rack of the oven and bake it for 30 min.
Remove from the oven and let it cool for about 10-15 min.
Cut the rectangular cake diagonally into 1 inch strips.
Place the cut side on the top and bake them again for about 10 min. I put it on broil for a minute for a crusty look.
Remove from the oven and enjoy them warm with a cup of milk. Store the remaining biscottis in an air tight container and enjoy for upto a week!
