For Day 2 week 4 of BM #40, here is another healthy option to pack for your picky eater. My older one instantly loved the flavors but my little one was a little hesitant to take it to school though she did try out a couple bites at home. Her diplomatic comment was, 'Amma, It is nice but I don't want it for lunch'. :)
Next time I plan to try out more 'challenging' veggies like spinach and methi!

Ingredients -
Bread Slices 4
Besan /Senaga Pindi /Chick Pea Flour 1/2 cup
Water 1/2 cup (or as needed)
Salt, Garam Masala, Red Chilli Powder, Dry Mango Powder as needed
Onions, finely chopped 3 Tbsp
Carrots, Grated 3 Tbsp
Note -
*Feel free to add any more vegetables to the mix. Spinach, finely chopped bell pepper, methi leaves, green chillies, coriander leaves etc work very well in this.
*Also for a non-vegan version try adding yogurt instead of water.
Method Of Preparation -
In a mixing bowl, add chick pea flour(besan), salt, garam masala powder, chopped/grated veggies and mix well.
Add water gradually and make a lump free batter. (More like idli batter). It should be a spreadable consistency.
Heat the tawa/griddle. On a bread slice (I made 2 triangles from one slice apply the chick pea mixture on one side of the slice and gently place it face down on a greased tawa/griddle.
Now while the underside is cooking, apply the chick pea mixture on the top side of the slice.
Flip it over when the underside is cooked to golden brown and cook the other side as well.
Remove and let it cool on a wire rack.
These go with Ketchup or any other dipping sauce preferred for a healthy lunch box! It can also be served as breakfast or even an after-school snack. My kids loved it either way!
