Recently, my husband had this soup at an office party and he was praising it so much that I had to give it a try. After searching for various versions, I settled with this and asked my husband for his verdict.
He looked up to me, smiled, slurped some more of the soup and teasingly said, "It comes a close second!". I took it as "It is very good but it tasted better at the party as it was loaded with cream." :):)
So here is another bookmarked recipe for Day 2 Week 4 of BM #43.

Ingredients -
Celery, chopped 1 cup
Carrots, peeled and chopped 1 cup
Onions, chopped 1 cup
Wheat Flour 1 Tbsp
Butter 1 Tbsp
Vegetable Stock 3 cups (divided use)
Milk / Cream 1/2 cup
Salt and Pepper as needed
Method Of Preparation -
In a stock pot/ deep pan/pressure cooker, melt butter and saute onions until they are golden brown.
Sprinkle flour and saute making sure the flour doesn't brown.
Pour about 3/4 cup of the vegetable stock. Mix so there are no lumps.
Cook for a minute and add the carrots and celery along with the remaining vegetable stock. Also add cream/milk and salt.
Cover and cook for about 15 minutes under pressure (typically 2 whistles). Open the lid after the cooker cools down.
Transfer the contents into a blender and blend until smooth. (I used a high power blender)
If needed transfer back the smooth puree into the stock pot/pressure cooker and simmer for a few minutes.
Sprinkle salt and pepper as needed and serve hot along with some flavored croutons.
