My older one has been baking cakes on her own for quite sometime now and those have been the ones I had already baked. This summer she was behind me to let me bake any cake of her choice from any of the blogs.
After much deliberation, we agreed that she could choose any cake from my bookmarks :). She picked this cake from Priya Suresh's blog. Priya baked it as a cake while my daughter baked cupcakes out of the same batter. She has since baked these couple of times with equal success.
In fact she distributed to her friends and were poof! gone in a few minutes! One of her friends, asked her if she could bake 50 such mini cupcakes for her birthday next month! I am so proud of her. This sure bolsters her confidence. So these are baked by my older one and pictures taken by me :)

Ingredients -
Whole Wheat Flour 1 cup
All purpose Flour/Maida 1/2 cup
Cornstarch 2 Tbsp
Sugar 3/4 cup
Orange Juice 1/2 cup (freshly squeezed please!)
Yogurt/Curds 1/2 cup
Vegetable Oil 1/2 cup
Orange Zest 1 Tbsp (Don't skip this)
Baking Soda 1 tsp
Baking powder 1/2 tsp
Cinnamon powder 1/2 tsp
Method Of Preparation -
Preheat the oven at 350 °F. Prepare the muffin pan either by greasing or using the liners.
In a mixing bowl, Sift the flours,cinnamon powder, corn flour, baking soda, baking powder.
In a separate bowl, whisk the sugar, yogurt, oil, orange juice,orange zest until the sugar gets dissolved.
Gradually add the dry ingredients to the wet ingredients until everything get well mixed without lumps.
Take care not to over mix.
Fill the muffin cups two-thirds full. Bake for 15-17 min or until a toothpick inserted in the center comes out clean. Let them cool completely!
Preparation Time 15 min + Baking Time 15 min
Makes 24 mini cupcakes and 6 regular cupcakes
