Christmas parties in my kids' schools have inspired me to bake some cookies for the holiday season and I had ambitious plans of taking these cute cookies to school. I looked all over the internet for sugarless cookies. I was inspired by eggless and sugarless cookies from ifood.tv and Zesty South Indian Kitchen and improvised by adding tofu and made them vegan too. These cookies were not too sweet and had a slight hint of pepper. I was surprised when my kids cleaned out the baking trays not even allowing the cookies to cool down. So taking these cookies to school didn't happen. Anyway the kids had lot of fun eating those. My little one loved the star shaped ones and was grabbing some from the plate which I used to take pictures!






Ingredients


Bread Flour 1 cup
Dates 1/2 cup Pureed
Pepper 1/4 tsp
Baking Powder 1/8 tsp
Tofu 1/2 cup Pureed (I used extra firm)
Olive oil 3 Tbsp
Water 1/8 cup

Note
If you want sweeter cookies feel free to add any sweetener of your choice. I chose not to add sugar as my intention was to make it sugarless.
Add a little salt if needed. 
Bread Flour can be substituted with All purpose flour.

Method Of Preparation - 

In a mixing bowl, add bread flour, baking powder and pepper.

Puree the dates and tofu using as much water as required. I used about 1/8 cup of water to puree. 

Add it to the flour mixture and knead well adding the olive oil gradually.

Make a stiff dough and put it in a zip lock cover (cling wrap also would be fine) and refrigerate for 30 min.

Preheat the oven at 350F. Prepare the cookie sheets by lining them with foil and spraying oil on them.

Roll the dough into thick sheet and cut out shapes as per preference. Place the cut out shapes on the oiled cookie sheet. (I had to use a thick plastic sheets, place the dough between the sheets and roll out).

I cut out bite size star shaped cookies and I baked them for about 18-20 min. 

I didn't have the need to store them as they were none left in less than an hour of baking them.

    @Suma Gandlur - The original recipe called for mascarpone cheese. I have never used that so I substituted it with Tofu and the addition of tofu gave a very nice texture to the dough and p'bly enhanced the quality of the cookies too (else my kids wld'nt finish them in less than an hr!)
