I always used to wonder what these digestive biscuits were, until a few months back when I finally bought a pack of them from the local Indian store. I found that they were fairly good but the kids didn't take to them and so I forgot about them.
These Digestive biscuits originated in UK and hence the name. They were originally known as Wheaten and are also known as Sweet meal biscuit.
When I was searching for recipes starting with E, I found this here and thought I should give it a try. The only thing that was bugging me was the butter content in the recipe. But then I thought the kids could indulge once in a while and went ahead and baked these. My little one liked them after a couple days!! But no points for guessing who indulged :).
I must confess that we cannot be blamed because they were just too good to resist :). Check out E for English Digestive Biscuits under the 'International Cuisine'. It also qualifies under 'Baked Dishes'.
Ingredients -
Whole Wheat Flour 1 1/2 cups (I used Aashirwad Multi Grain Flour )
All Purpose Flour / Maida 1/2 cup
Baking Powder 1 tsp
Butter, unsalted 1/2 cup at room temperature
Sugar little less than 3/4 cup (Confectioner's sugar recommended)
Cold Milk 1/4 cup
Method Of Preparation -
In a mixing bowl, add the flours and baking powder. Rub the butter into the flour and mix well to resemble bread crumbs.
Toss in the sugar and add milk as needed to knead into a stiff dough.
Preheat the oven to 350 °F.
For ease of use divide the dough into 6-8 portions. Roll out each portion of the dough into 1/8th inch thick sheet.
Cut out into desired shapes and arrange them on a parchment lined baking tray. Continue for the rest of the dough. Traditionally digestive biscuits are circular in shape and 2 1/2 inches in diameter.
Prick evenly on all the cut out cookies. Bake them for about 15 min or until they turn pale gold.
Let them cool for a while and serve with milk/tea. They store well in an airtight container for up to a week or more (if they last!)

beautifully made Harini, I had made them once, but was fairly new to baking back then , so althoguh they tasted well, they did not look as beautiful as yours
