Eggless Mango Mug Cake

This was a long pending mug cake which I could finally make a few weeks back and the kids literally fought over these. I had to prepare these cakes twice on the same day to resolve their conflict!

The only down side of these microwave mug cakes that they get dried out and harden as they cool down. So these are best consumed while still warm. Check these for Day 3 Week 3 of BM #40.

Ingredients - 

Mango Puree 3 Tbsp
Milk 4 Tbsp
Olive Oil 1 Tbsp
Sugar 4 Tbsp
All Purpose Flour / Maida 4 Tbsp
Baking Powder 1/2 tsp
Baking Soda 1/4 tsp
Salt a pinch
Club Soda 2 tsp (Optional) 
Chocolate chips for topping


Eggless Mango Mug Cake

Method Of Preparation -


Blend the liquid ingredients, that is, mango puree, milk, oil and sugar.

In a mixing bowl, whisk flour, baking powder, baking soda and salt.

Pour the wet ingredients slowly into the flour mixture. Mix gently for a lump free batter.

Splash the club soda and gently mix.

Grease the 8 oz microwave safe mug. Pour the batter filling the mug to a little more than half full. (I used 2 smaller bowls instead)

Place it in the microwave and cook for 1 minute on high. Remove, tap it lightly and put it back for 30 seconds more.

Let it remain for a minute inside and serve immediately after.

Like any cake cooked in the microwave, it tends to become dry and hard upon cooling. But tastes great when consumed warm.

  12. I once made microwave chocolate mug cake and as you said it got dry as it cooled. Next time I make mug cake I will remember that. I thought the recipe failed me. Mango mug cake sounds good.
