Mango-Coconut Scones

If you are a regular reader of this space, you probably know that my family loves scones and I love to bake them as they have less sugar and lesser fat than most sweetmeats.

Here is another version this time with the tropical ingredients of mango and coconut. The coconut milk is a surprise addition which makes all the difference. This is part of Day 2 Week 3 of BM #40.

Ingredients - 

Whole Wheat Flour 1 cup
All Purpose Flour/Maida 3/4 cup 
Baking Powder 1 1/2 tsp
Salt 1/2 tsp
Ginger, grated 1 tsp
*Sugar 1/4 cup (or more to taste)
Olive oil 3 Tbsp
Mango, ripe, peeled, seeded and chopped 1/2 cup
Coconut Milk 3/4 cup
Topping - Sugar 1 tsp and Grated Coconut 1 tsp


* When I made these, I omitted the sugar and we ate these scones with some strawberry jam. So add the sugar as needed.


Mango-Coconut Scones

Method Of Preparation -


Preheat the oven to 400°F.
In a mixing bowl, add the flours, salt, ginger and baking powder. Rub in the oil and mix well.

Add the chopped mango and gently mix.

Gradually add the coconut milk in the flour mixture and mix to make a sticky dough.

Pat the dough with oiled hands onto a parchment paper lined baking tray.

Sprinkle sugar and coconut and using a pizza cutter or a knife, divide the patted dough into 8 equal parts  (like a pizza) bake for 18-20 min.

Remove and serve them warm with jam or just as is.
