I had bought some 4 lbs of dry dates (Endu Kharjuralu/Khajuralu) long time back and they have been idling in my pantry for over 6 months now. I had googled all over the internet for good recipes using dry dates, but didn't really get any interesting ones. Then, I called my SOS hotline (which happens to be my sweet sister Harini) and she suggested this recipe to me.
I made it about twice now with great success and this time it was for my in-laws that I made it yet again. I made a small modification to the original recipe which called for the use of khova and replaced it with condensed milk with even better results. A simple and a pretty guilt free sweet recipe which our entire family has been relishing for the past few days.
Ingredients –
Dry Dates – About 12 to 15
Condensed Milk – 4 to 5 Tbsps
Milk – ½ cup
Almonds, cashews, walnuts (optional) – fistful of each
Ghee – 1 tsp
Method of Preparation –
Soak the dry dates and the other nuts for about an hour in milk, remove the seeds from the dates and grind them to a smooth paste.
Heat Ghee in a pan and add the ground paste and condensed milk to it. Mix well and keep stirring for about 5 minutes or till the whole mass comes together.
Transfer the entire paste to a microwave safe bowl and put it in the microwave for about 10 minutes, stirring it every 2 minutes. You could alternatively continue stirring the mixture on stovetop for about another ½ hour or so till it thickens or you could also carry out the process entirely in the microwave.
Once it becomes slightly dry, transfer it onto a greased plate and let it cool for a while. Cut it into small pieces and its ready to be devoured.

Makes about 15 pieces

Can the nuts be completely omitted from this recipe and if only dates are used, do they solidify?
BTW, do you prepare dates kheer?
I can't think why it won't solidify but I am assuming it would take a little more time..and I never prepared dates kheer..shall try that too ..good idea though!
