On a weekday afternoon, I realized that I hadn't made anything for my lunch and just thought I would make some healthy soup instead of a full course meal and so this soup happened! I wish I get more such brain waves which help me stay healthy :) I know this soup definitely sounds like the South Indian Sambar variation, but trust me it is worth every bowl. The flavors were very mild and fit for the kids too. Moreover it was very filling , nutritious and a great combination of lentils and vegetables. Give it a try and you can thank me later.
Ingredients - (I know the list of ingredients is long !!)Toor Dal 2 Tbsp
Urad Dal 2 Tbsp
Chana Dal 2 Tbsp
Masoor Dal 2 Tbsp
Moong Dal 2 Tbsp
Zucchini cubed 2 cups
Carrots cubed 1 cups
Chayote Squash cubed 2 cups
Tomato cubed 1 cup
Spring Onions 3-4 (whites and greens separated)
Curry Powder 1-2 tsp (as desired)
Salt and Pepper as desired
Coriander-Cumin (Dhania-Jeera) Powder 1 tsp
Mirchi Powder 1/4 tsp (or as desired)
Lemon Juice as per taste
Cinnamon 2 inch piece
Bayleaf 1-2
Seasoning (Oil 1 tsp, Fennel seeds 3/4 tsp, Hing/Asafoetida couple pinches)
* Feel free to use any vegetables available to suit your taste and pantry!
Method Of Preparation -
Pressure cook all the 5 lentils/dals adding 4-5 cups of water, bayleaf and cinnamon.
Meanwhile boil all the veggies in a sauce pan or microwave.
In a heated sauce pan, add oil, fennel seeds and hing. After the fennel seeds are slightly brown, add the spring onion whites and saute till the raw smell is gone.
Also add the boiled veggies and the flavorful spice powders (Coriander-Cumin Powder, Curry Powder, Mirchi Powder, Salt and Pepper).
After the pressure cooker has cooled down and ready to be opened, discard the cinnamon and the bay leaf from the cooked lentils and add the cooked lentils to the boiling veggies.
Add sufficient water to achieve the consistency of a stew and adjust the flavors as desired.
Serve hot with bread or as is with some lemon juice squeezed in!!
