O for Oats Upma under International/Fusion Recipes for BM #32. In recent years the usage of oats has increased many fold, specially in India. The traditional Western way of consuming oats is mostly sweetened and paired with milk in many cases. But we Indians prefer having something spicy to start the day with, right?
So after listening to so many complaints from my relatives about their plight , that is their inability to effectively enjoy the goodness of oats in their breakfast routine, I thought I should try out a version which is close to my heart as well!
This one here resembles Poha Upma and so my older one loved it as well.
Ingredients -
Rolled Oats 1/2 cup
Carrots, chopped 1/2 cup
Onions, chopped 1/4 cup
Salt as needed
Turmeric 1/4 tsp
Green Chillies slit 2-3 (or as needed
Peanuts/Almonds/Cashews roasted and coarsely crushed 2-3 Tbsp
Lemon Juice as needed
Seasoning (Oil 2 tsp, Chana Dal 1 tsp, Urad Dal 1 tsp, Mustard seeds 1/2 tsp, Curry leaves few)
*Add as many vegetables as you prefer. I just had carrots on hand so used just those!
Method Of Preparation -
Wash the rolled oats, drain and set aside.
In a heated pan, add oil and the seasoning ingredients. After the mustard seeds pop and the dals are brown, saute the onions until they are golden brown.
Add chopped/grated carrots and green chillies and saute them until they are just about cooked.
Add turmeric, salt, roasted nuts of your choice and mix well.
Add the drained oats and sprinkle about 2-3 tablespoons of water if needed.
Mix well and remove from fire. Squeeze in lemon juice as per taste and serve hot.

A lot of diabetic people have oats just the way we have rice. You cook oats with water and mix it with sambar and have a vegetable for side dish!!
The upma looks really nice and its great that the entire thing is not a single sticky mass...

Unfortunately we don't get these rolled oats here so the upma I make doesn't come out this good. IT looks so inviting...
its true as much as I love oats, I haven't tried any of the savory versions I have seen on blogs because to me it should be eaten as a sweet as in cookies or muffins or sweetened breakfast cereal. I can't quite bring myself to eat it as a savory as delicious as your recipe looks!
