After tasting the rich Lucknowi Dahi Vade, it is the turn for this traditional dish from Uttarakhand, formerly Uttaranchal. It is a relatively new state, carved out of Uttar Pradesh in 2000. Uttarakhand is also known as the 'Land of the Gods' due to the various pilgrim centers and temples. Visiting Badrinath and Kedarnath are considered very auspicious by Hindus.
It is also known for its natural beauty and many tourist spots like Dehradun and Nainital. The state is divided into two provinces, Garhwal and Kumaon.
Coming to the recipe for today. I understand that this is made during weddings and other festive occasions. This is a typical Garhwali dish.

Ingredients -
Wheat Flour 1 1/4 cup
Ghee 2 tsp
Sonf/ Fennel seeds 1/2 tsp
Cardamom powder 1/2 tsp (Optional)
Jaggery 3/4 cup (may be a little less as per taste)
Water 1/2 cup or less
Milk as needed to knead the dough
Method Of Preparation -
Melt the jaggery with a little less than 1/2 cup of water and strain for impurities. Set aside the jaggery solution.
In a mixing bowl, add the wheat flour, fennel seeds, cardamom powder and rub in the ghee.
Add the jaggery solution and knead into a stiff dough. Add milk if needed.
Divide the dough into 6-7 portions. Roll each portion into a (3 inch in diameter and slightly thick) disc.
Heat the griddle/tawa. Place the rolled out disc and cook on both sides spraying as much oil/ghee as needed.
Remove and continue to make the rest of them.
Serve them warm for a filling snack.

I see your version uses very little ghee. The fennel and cardamom must have added a really nice flavor. They looks great.
