My husband and even I are very fond of this wonderful and delicious sweet. We often buy this at a local store and satisfy our cravings once a while. Recently, I was going through some old recipes for good sweets and suddenly spotted this one on Madhuram's 'Eggless Cooking'. I was completely taken in by the simplicity of this calorie rich burfi and decided to try my hand at it.

There's this huge misconception that cashews are not a very healthy option as they are rich sources of fat. Though the fat content is high, the fat in it is categorized to be 'good fat' due to its agreeable fat ratio which makes it an ideal nut for good health. It is also packed with a lot of protein and is rich in minerals like iron, magnesium, phosphorus, zinc, copper and manganese. With its cholesterol free profile, it is also known to raise the levels of HDL (known as good cholesterol) cholesterol.



Ingredients -


1 Cup Cashews
1/2 Cup Sugar
5 Tbsps Water
1/2 tsp ghee (Clarified butter)
1/2 tsp Cardamom powder (Optional)

Method Of Preparation -

Take the sugar and water in a preferably wide bottomed nonstick pan and heat the mixture on medium flame till it becomes very thick. I boiled it for about 8 mins.

Also, add the cardomom powder to the syrup.

Meanwhile, grind the cashews to a fine powder in a spice grinder.

Add the powder slowly to the sugar syrup and mix well till it is well coated and add ghee to it.

Keep mixing it thoroughly for about 2 mins breaking any lumps if any till it forms into one big mass.

Switch off the flame and let it cool for a while. Before it's just about warm to touch, take it onto a greased aluminium foil and knead it well into a soft dough. Place another greased foil over it or use the same foil sheet to cover the dough and use a rolling pin to evenly spread it out to about 1/4 mm thickness.

Leave it alone for about 20 mins to 1/2 hour and then cut them into pieces of a shape of your choice.

  24. Thanks everyone. We love them too and it didn't last beyond a couple of days! I also made them a second time, this time with 1 cup of almonds and 1 cup of walnuts and cashews. They came out pretty well too.
