After a bout of inaction last month, Blogging Marathon - Edition 9 is back on track this month. This time Srivalli has announced some very interesting and challenging themes forcing us to move out of our comfort zones, so to say. I have opted to blog for 2 continuous weeks with two different themes. Check out what my fellow marathoners have chosen for this marathon.
For the first leg of Oct 16-22, I chose the topic which is very dear to my heart, 'Dressing up leftovers for kids'. Incidentally this topic also happens to be the heart of the event I am currently guest hosting 'Kid's Delight - Dressing up leftovers'.
One fine early October evening, S got a huge cauliflower (as huge as a medium size watermelon) and about 30 lbs of tomatoes from a local farmer. Now how was I to accommodate these in the refrigerator. That thought challenged me and I set about chopping the cauliflower into bite sized florets and froze more than half of it. The remaining appeared as Cauliflower Fry at the dinner table. [About the tomatoes - shall elaborate sometime later.]
Now is there a Murphy's Law that when there is an abundance of something, it is not preferred at all? That is exactly what happened and I was at loggerheads as to what to do with the leftover curry. These days I am looking at high protein vegetarian sources to introduce to the kids. So the mixture of Soy chunks and Cauliflower with some spices evolved and I am sure I am going to sneak in more veggies in the future. I am lucky that the kids have taken a liking to the soy chunks and have been consistent so far (touch wood!).
Ingredients -
Soy Chunks (Textured Vegetable Protein TVP) 2 cups (I used the medium sized chunks from Nutrela)
Leftover Cauliflower Fry 2 cups
Green Peas 1/2 cup
Ajwain /Vaamu powder 1/2 tsp
Turmeric 1/2 tsp
Jeera Powder 1/4 tsp
Sugar 1/4 tsp (Optional)
Salt as needed
Balti Masala (Or Garam Masala) 1/2 tsp
Seasoning(Oil 1-2 Tbsp (Divided use), Jeera 1/2 tsp)
To Grind -
Onion finely chopped and sauteed 1/2 cup
Tomato Puree 3/4 cup (I used condensed tomato puree so added only 1/2 cup)
Ginger (1 inch piece)
Garlic (1-2 cloves)
Coriander leaves Handful
Green Chiliies 1-2 (I used just half as I was trying to please my kids :) )

Method Of Preparation -
Roast the soy chunks in a teaspoon oil until they slightly change color.
Soak them in 3-4 cups of Hot water adding 1/2 tsp of salt. Set aside for 10 min.
Grind the ingredients listed under 'To Grind' and keep aside.
In a heated sauce pan/kadai/wok, add oil and jeera. After the cumin seeds splutter, add the ground masala from the previous step.
Mix well adding a cup of water. Add Turmeric, Ajwain Powder, Sugar, Jeera Powder and let the mixture cook well until oil oozes out. It took me about 7 min.
Since I had the leftover Cauliflower Fry which I planned to sneak into this Curry, I just boiled some green peas and added it to the Masala. I intended adding some more vegetables but somehow skipped them. [If there is no leftover curry, nothing to worry, just boil any vegetables handy and use here!!]
Wash the soaked soy chunks in clean cold water and squeeze out the extra water. Add them to the simmering curry. Also add the cauliflower fry and boiled green peas.
Add the required salt keeping in mind the salt in the leftover cauliflower fry, salt added to the soy chunks soaked in water. Also add the Balti Masala/Garam Masala to the curry and mix well.
Remove from fire after a few minutes and optionally garnish with coriander leaves. This could be made into a gravy too if required.
Serve it with Rice/Roti/Bread. I loved to eat it with Curds/Yogurt.

this is a delicious use of soya chunks - the once I followed instructions and soaked them they started looking like chicken and I dumped the whole thing :( have been fearful of trying again!

Agree with yoru murphy's law theory for food...must say you have much better creativity, I would have ended up mixing it with plain rice and serving as a fried rice dish, this is more attractive proposal.
