What can I write about this simple and humble green beans curry which appears so very frequently on on dining tables? This healthy vegetable can be transformed into a number of mouth watering dishes almost in a flash what with the gadgets available in today's kitchen.
My mom cooks the beans in the pressure cooker along with Dal and/or rice and meal prep is a breeze from there! Dal, Beans curry and rice all done in 30 min :) and add Tomato Rasam to the mix as it is done while the pressure cooker is working hard !! Whether you use pressure cooker and/or microwave, cooking this meal is surely a matter of minutes, don't you all agree? Here is Green Beans Curry for Day 6 of BM#5.
* Sometimes I add chopped onions too and sometimes I add the peanut-coconut masala and sometimes it is just salt, red chilli powder and coconut powder. But each time it is a delight to have it as part of a meal!
Method of preparation -
Boil the chopped green beans. [I cooked them in the microwave for 8 min.]
In a heavy bottomed pan, heat oil and add the seasoning to it.
After the mustard seeds splutter and the chana dal and urad dal turn golden brown, add the boiled beans. Add turmeric too and mix well.
Grind coconut powder, coriander leaves and green chillies and sprinkle it on the beans. Also add salt and mix well.
After about 2-3 min the curry is ready to be served with steaming hot rice!!
