This is one of the 'out of the ordinary' recipes from Amma. She has mastered the art of making sweets over the years and has extensively experimented in the area of halwas, burfis and kheers :) This kheer for sure took me to my mom's kitchen. Agreed that we both have different styles of cooking but the end result is the same when it comes to desserts !! 
Here since I have used fat free milk, I have compensated by adding milk powder to add in some richness. This addition of milk powder has taken the kheer to a different level. It gave a very rich flavor and texture comparable to the famous basundi :) The kids took an instant liking to this kheer and assurances from me that this will certainly be made more often pacified them for the moment :) After the success of Beerakaya Payasam,I am convinced that this may be another way of sneaking in some fiber, What do you think?  And trust me on this, even the best food critic cannot find the traces of the bottle gourd !!


Sorrakaya Carrot Payasam

Ingredients - 

Sorrakaya / Doodhi / Bottle Gourd,  peeled and diced 2 cups
Carrot Peeled, Cubed 1 cup
Milk 2 1/2  cups (I used Skim milk)
Milk Powder 1/2 cup (Non fat dry milk)
Sugar 5-6 Tbsp (or as per taste)
Almonds  6 
Cardamom Powder 1/2 tsp
Saffron strands a pinch
Roasted Cashews for Garnish

Method Of Preparation - 

In a microwave safe bowl, cook the bottle gourd and carrot and 1/2 cup of milk until it is cooked well. (Alternatively cooking bottle gourd and carrot can be done either on the stove top or in a pressure cooker)

Upon cooling, grind the boiled bottle gourd, carrot and almonds to a fine paste.

In a separate bowl, mix the milk powder and 1/4 cup of cold milk to make a smooth mixture.

In a heated sauce pan, boil the remaining milk and sugar. 

Mix in the vegetable paste and the milk mixture.


Sorrakaya Carrot Payasam

Stir continuously to avoid the burnt smell of the kheer.

Sprinkle the cardamom powder and stir the kheer for about 7-8 min.

Remove from fire and garnish with some roasted cashews and saffron strands.

  6. Until someone in my family mentioned, I did not know that bottle gourd kheer is a common one in Andhra regions. I make both bottlegourd kheer and carot kheer, but never thought of combining them both. Definitely a delicious combo. Will surely give it a try.
