What is not to like about corn and palak? I know for a fact that the kids are major corn fans and they surely appreciate Palak Tofu which I frequently make. So on a hunch I made this combination instead of the usual and guess what the kids loved it! So one more way to get them to eat their greens, don't you think? Try it and let me know how they liked it.


I had to re compose this post as this post was lost in the Blogger maintenance problems and I will look for some wonderful comments posted by some of you and if possible add them as my comment. 


Corn Palak


Ingredients - 

Spinach leaves,   2-3 cups
Corn, fresh or frozen 1 cup
Onions , finely chopped 1/2 cup
Green Chillies 1-2 (or as per taste)
Coriander leaves a few
Ginger paste 1/2 tsp
Curds/Yogurt 1/2 cup or more if needed
Turmeric 1/4 tsp
Red Chilli Powder 1/2 tsp 
Amchur Powder 1/2 tsp
Garam Masala 1/2 tsp
Kasoori Methi 1 tsp
Salt as per taste
Seasoning (Oil 1-2 Tbsp, Jeera 1/2 tsp)

Method Of Preparation -



Blanch spinach (Dip the spinach leaves in boiling water, drain, wash in cold water and drain again) and puree along with coriander leaves and green chillies in a blender.


Boil corn and set aside. [I microwaved corn for 3 min]


Heat a non-stick pan and roast onions and ginger paste until the onions get a golden brown hue. 


Add turmeric powder, red chilli powder, dry mango powder and salt. 


Add one fourth cup of water. Mix well and simmer for one to two minutes. Add yogurt and mix well. 


Add spinach puree, boiled corn, adjust salt and cook for two minutes. 


Corn Palak


Sprinkle garam masala powder, kasoori methi and remove from heat. 


Garnish with chopped tomato and serve hot with rotis/steaming hot rice.
